Growing own Methi and cooking Heavenly Methi Chicken

It’s such a joy to see my balcony garden bright with sunshine every morning and watch my little seedlings growing so fast to become young plants. Happiness is caring and nurturing these little seeds of hope and joy❤️💕


The seeds of dry chillis and green peas are growing up too fast to become young plants . So are the spring onions and methi plants.




Now, It’s time to harvest the tender methi leaves from my methi plants grown from kitchen seeds just three weeks back. And the first thing I am preparing using these tender leaves from my own garden is my Ma’s recipe Methi Chicken. 



It tastes awesome and very easy to cook. Here is the recipe.


Ingredients:


1. Chicken

2. Yoghurt 

3. Methi seeds

4. Garlic

5. Bay leaves

6. Turmeric powder

7. Red Chilli powder 

8. Dried Kashori Methi 

9. Green Chilli

10. Mustard Oil

11. Salt 

12. Methi leaves from my garden😊


Method:


Step1: Marinate chicken with yoghurt, red chilli powder, turmeric for 4/5 hours. You can use Kashmiri chilli powder as well for that extra colour😊


Step 2- Heat mustard oil in a pan.

Mustard oil is must for the rich flavour.

Put bay leaves, methi seeds and garlic paste. Cook in slow flame for some time. 

Then add marinated chicken pieces and fry for some time. Add salt and Methi leaves . Put the whole marination in it and cook in slow flame covered until the oil separates and there is thick gravy and chicken is cooked well. No use of water in this recipe. 


Step 3- Garnish with green chilli and dried kashori methi leaves.


Step 4- Enjoy with steamed rice or paratha😀
